60 Days of SPAM?

Probably not a good idea.

It's over. Honestly, I'm a little bummed. You wouldn't think thirty days is enough to get nostalgic about, but it's been a long journey. So many emotional highs and lows...


You remember.

I get the "will you keep eating SPAM?" question a lot these days, and my answer- for the record- is "you're damn right I will."

I'll miss sharing it with you though.

I'm going to put together a recipe book from my adventure - something handmade. You're welcome to have one. Email me if you're interested and I'll shoot you some info.

I guess that's about it.

Unless you're all SPAM'd out, try my recipe for Grilled SPAM, Fresh Garden Tomato, Cheddar Cheese and Sweet Onion Sandwiches.

Just take two pieces of bread and add some spicy Deli mustard. Layer some sliced Sweet onion, SPAM cut in 1/4" slices, Cheddar Cheese, and thick cuts of fresh Tomato from the garden. Lightly butter the top of the top piece of bread then carefully flip the entire sandwich upside down into a non-stick pan on medium-low heat. Lightly butter the other piece of bread which is now on top. Cook covered with a suitable lid over medium-low heat until bread is browned and cheese is melted. These will be HOT so it's best to let them cool on a plate for 5 minutes or you risk burning your tongue or roof of the mouth. Grab a knife, some paper towels, some catsup, and ENJOY!

Of course you have to continue...I say that you have to cook every one of the SPAM dishes in the new cookbook...but maybe once a week? Even a twice monthly post about SPAM would be worth it.

And yes of couse I want a copy of your recipes!

And I keep thinking the new SPAM Singles would have been the perfect thing to take to that wedding!

Alas, my days are so boring now. I so miss reading your SPAM adventures! As Mrs. L said maybe a once a month update? Something new you have come up with. I cry tears of sorrow my friend. I miss you.
